and grilling are closely related cooking methods with each using indirect dry
heat to cook the food - usually meats.
Traditionally,
roasting meant cooking foods in front of or over a bed of coal, but that
practice is less common now since we live in high rise buildings. More popular
in Malaysia, is grilling.
So
what is the difference between the two?
As it
turns out, it is down to temperature and time. Grilling is about getting a
quick sear with high temperatures while barbecuing requires a slow hand over
lower temperatures. So grilling is great for small cuts of meat and BBQ is the
preferred method for larger cuts that require a longer cooking time.
